Easy Salsa Verde Recipe
This is my favorite way to use tomatillos from the garden. During the summer, we love to relax outside in the evening and enjoy chips & salsa, vegetables & hummus, or whatever snack-type foods we can find. We savor those long, warm evenings.
Usually, I make this recipe using traditional green tomatillos. I’ve updated the photos over time, so you might see some gorgeous purple tomatillos (grown by a fellow gardener) in some of the photos….aren’t they gorgeous?!
Ingredients
Makes about 2.5 cups of salsa
1.5 lbs tomatillos
1 clove of garlic, peeled
1 medium jalapeno *spice levels can vary from pepper to pepper
1/2 of a medium white onion, chopped
2 TBS lime juice
a handful of fresh cilantro (about 1/4 cup)
1/2 teaspoon kosher salt
Method
Peel the husk off the tomatillos. Wash and dry.
Preheat the broiler and make sure the rack is about 4-6 inches from the heat source.
Place the tomatillos, jalapeno, and garlic clove on a rimmed baking sheet and broil.
Once brown spots start to form (about 7 minutes), you can turn or mix the tomatillos and jalapeno to start cooking the other side.
Cook about another 3 minutes, or until everything looks blistered.
Remove baking sheet from oven and let cool slightly.
Meanwhile, add the onion, cilantro, lime juice, and salt to a food processor or blender.
Add the cooked tomatillos, jalapeno, and garlic to the processor or blender. They should be slightly cooled, but always use caution when blending warm liquids.
Blend until smooth. Add more salt or lime juice to taste.
Serve or refrigerate until serving.
NOTE: this salsa thickens a lot in the fridge. You can always add a little water to thin it out if desired.

Thank you! Broiling provides great flavor in less time. I also find that homegrown tomatillos have a slight sweetness that is emphasized when broiled. Yum!
